Apple Cinnamon Fruit Leather

First and foremost, can I get a shout out to my son Caleb for this picture? He loves helping me take pictures of my food and this one he did all by himself! Like ... the whole thing! The set up and everything. Way to go kiddo!

So quick question, do you guys have a designated fruit spot in your fridge? When I buy fruit I place it in a bowl in the center of the fridge right at eye level. That way when someone opens the fridge to grab something to eat the fruit is the first thing they see! A couple weeks ago I got the boys their favorite apples, Granny Smith, but where my son was helping me put the groceries away the apples got tucked into the back of a door not to be seen again until two weeks later. At this point they were a little soft and starting to wrinkle slightly so I knew what it was time for, my all time favorite dessert, apple crisp!

So I made my apple crisp and still had some leftover apples so I decided to make homemade fruit leather. The pictures you see here is actually from the second batch! My boys ate the first one so fast I didn't have time to take a picture of it! I had to go back tot her store to get more apples to make a second batch so I (excuse me, Caleb) could get some pictures! So yes, kids like this, a lot!

One thing you will need though ... a lot of time! This cooks for 4-6 hours so don't plan on doing this on a day when you're going to be out and about. Once that 5 hour mark hits you need to check it every half hour or so to make sure you don't overcook it. Undercooked and it will come out like slightly solidified applesauce but overcooked and it'll crack to the touch so timing here is essential. So naturally you're wondering how can you tell when it's done ... you touch it and once your finger can come off clean, without sticking to it, then it's done.

- 600 grams apples, I used all Granny Smith but you can use any kind you want, or an assortment of whatever you have on hand!

- 4 Tbsp. Sugar

- 1/2 cup water

- 2 tsp. Cinnamon

1. Prepare a baking sheet with parchment paper or s baking mat. The size of sheet pan I used was 9 1/2 x 13. Set oven to 170 degrees.

2. Cut and peel the apples into small sections and place in a pot.

3. Add water to the pot and bring the mixture to a boil.

4. Reduce heat to medium and let the apples simmer for 10 minutes or until soft. Mash them slightly. Add the sugar and cinnamon and cook for another 2-3 minutes stirring constantly.

5. Place the mixture into a blender and blend until smooth.

6. Pour the mixture into a prepared baking dish and place into oven. Lightly bang sheet against counter top to even out the mixture. Bake for 4 - 6 hours.

7. Start checking around 4 hours. You are wanting the tour finger to come off clean with very little sticky feeling left to your leather.

8. Let cool for 20-30 minutes before cutting and serving. If your kids don't eat all this immediately you can store it by wrapping it parchment paper.
