Ahhhhhh! This soup! It’s my go to comfort dinner when it’s cold outside, and it has been cold here in Dallas. This soup is easy, fast (start to finish is 30 min), and delicious. Seriously, I have yet to meet anyone who doesn’t love this soup! While it took our family a while to come up with a name we could all agree on (options like Carrot Chowder & Halloween Potion were on the drawing board 😂), I feel like we landed with the perfect one.
PLEASE ... do not be scared away by the carrots in this soup. I am 100% serious when I say everyone likes this soup! Give it a try!! - 1lb lean ground beef (93/7) - 4 cups tomato juice - 2 cans cream of celery - 1 1/2 cups water - 1 tsp garlic salt - 1 tsp pepper - 2 cups shredded carrots. I buy large carrots and shred them but you can buy the pre shredded carrots if you’d rather. 1. In a large pot brown hamburger over medium heat and drain. 2. All all other ingredients and stir to combine. 3. Turn heat up to high and allow soup to come to a boil. 4. Reduce heat to low/medium and let simmer for 20 minutes making sure to stir occasionally. My favorite way to eat this is with a Panera bread bowl, but you go ahead and do you! Grab your favorite bread or rolls and dip away.
