Just before I sat down to do this I added the ingredients to the crock to for this very meal so I chuckled a little when I sat down to catch up on blog posts and saw that this recipe was up next! The good news, it'll be done in 3-4 hours and my part is done!
Some people like to add all sorts of things to this simple recipe, spices, cream cheese, can of cream of whatever soups ... I like to keep the main dish simple but then add on the flavors once it's done.
Chicken & Black Bean Nachos
- 1 large chicken breast
- 1 can seasoned black beans
- 1.5 cup salsa
- 1 cup frozen corn
Place it all in the crock pot and cook own low for 4-5 hours or high for 3-4 hours. Once done, remove chicken, shred and place back in. Stir well to combine.
Serve this with whatever feels best to you! Cilantro and lime rice and chips (the hint of lime are amazing with this meal) are our families favorites. I also like to have add ons for whoever wants them; cheese, cilantro, fresh tomatoes, fresh lime slices, jalapeño slices, sour cream or anything else that sounds good to you and your family!
