I am pretty much the only person in my household who will eat veggies so if I want a stir-fry I typically make them for lunch. This is my all time favorite because it's easy and it uses all my favorite veggies. But the best part about stir fry is that you can change it up and use any veggies you want! So get creative and throw in what you love, or what you have left in the fridge! Either works!
- 100 grams each onion, asparagus & bell pepper, cut into bite sized pieces.
- 150 grams chicken breast, cut into bite sized pieces.
- 1 tsp. olive oil
- 1 Tbsp. Newman's Own Sesame Ginger Dressing.
- Salt & Pepper to taste
In a medium frying pan heat olive oil over medium heat, add chicken and sprinkle with salt and pepper. Cook until chicken is cooked through and no longer pink in the middle. Remove chicken from pan and set on a plate. Add onions only back to pan, sprinkle with salt and pepper and cook on medium heat until onions become translucent. Add in the asparagus and bell peppers and continue to cook, stirring constantly until veggies are tender-crisp. Add chicken back to pan and cook for a few minutes until chicken is warm. Pour all ingredients into a bowl and top with sesame dressing.
