German Pancakes

These are an absolute staple at our house! They are go-to meals for when we first walk in the door after church, a busy school night when I don't have a lot of time, when I want one of the boys to make dinner, when I don't want a lot of clean up or when I know the whole family will be happy about what I pull out of the oven.

- 2 Tbsp. butter

- 6 Eggs

- 1 cup flour

- 1 cup milk

- 1 tsp. salt

Set oven to 400 degrees. Chop up butter into small pieces inside of a 9x13 pan. Place 9x13 pan in the oven that is heating. While the oven is heating and the butter is melting, mix together the eggs, milk, flour and salt. Once oven is hot, pull pan out and spread butter so that it covers the entire bottom. Pour batter into pan and bake at 400 for 20-25 minutes. I prefer 25 minutes, this allows the edges to pull away from the pan and puff up really tall!


Our favorite toppings for German Pancakes are syrup, berries, a berry compote or jam (my favorite is to melt blueberries with cornstarch and cinnamon on the stovetop) or a lemon glaze made up of powdered sugar, a little milk and small amount of lemon juice.
