Homemade Mint Oreos

Last year at Christmas time a friend brought us some cookies similar to these and my family gobbled them up so fast that I decided to reach out to her and get the recipe this Christmas season.


Since mint is a favorite of mine I altered the recipe to add crushed up candy canes and mint flavoring where ever possible to really bring out the flavor that reminds me so much of Christmas.


My favorite part of this cookie? The candy cane pieces cooked into the cookie that create a small peppermint crunch to go along with the chocolate! Give them a try and then let me know what your favorite part is.


Homemade Mint Oreos

Homemade Mint Oreos


- 1 and 1/4 cups flour

- 1/2 cup cocoa powder

- 1 tsp. baking soda

- 1/4 tsp. salt

- 1/2 cup butter

- 3/4 cup sugar

- 1/4 cup brown sugar

- 1 egg

- 1 tbsp. vanilla

- 1-2 crushed up candy canes









1. Preheat oven to 350

2. In a large mixing bowl beat butter and white and brown sugars together until creamed.

3. Add the egg and vanilla extract and continue to mix until well combined.

4. Add the flour, cocoa powder, baking soda & salt and mix until a dough is formed.

5. Fold in the crushed up candy canes.

6. Roll the dough into circles about 2-3 tsp worth and set on a cookie sheet making sure to leave a few inches between them.

7. Press down on them to flatten and bake for 6-8 minutes.

8. Remove from oven and let cool for 5-10 minutes before removing from the pan.




Mint Frosting


- 1/2 cup shortening

- 1/2 cup butter

- 1 1/2 - 2 lbs powdered sugar (one bag of powdered sugar is a 2lb bag spot I use almost the entire thing)

- 2 Tbsp. milk

- 2 tsp. Adam's Extract pure peppermint extract (you can use more here if you like, my husband always wants me to add a third tsp, taste it and see what you think 😉).

- Additional: 2 crushed up candy canes. You won't add these to the frosting but once the cookies have been frosted and paired you'll take cookies and roll the frosted part into the crushed up candy canes.


1. In a large mixer cream together shortening and butter.

2. Add powdered sugar little at a time so that it doesn't poof back into your face and all over your counter tops and floor.

3. Add milk and peppermint extract and continue to mix until frosting is smooth.


* Feel free to play with this frosting recipe. Want it a little thicker? Add more powdered sugar. A little creamier? Add a little more milk. And don't forget to test taste the frosting, you never know, you may want to add a little more peppermint.


Assembly

- Pair the cookies together so that you have created matches with cookies about the same sizes. Frost one cookie and add the other cookie to the top of it. Roll the frosting into crushed candy canes or use your fingers to sprinkle crushed candy canes on top of the frosted part of the cookie.
