Summer means peaches! I had just picked up some fresh peaches for the first time this year when my sister-in-law brought me some hand picked blackberries. Do you know what that means?!?! It was time to make a peach and berry crisp. Years ago, while my husband was in law school, I had some good friends introduce me to this amazing combination! The peach flavor is perfect for summer and the dark purple from the berries creates a beautiful color. For this particular crisp I used the blackberries my sister-in-law picked, but I've made it with blueberries before and it's just as tasty!
Filling:
5-6 small peaches (700g), sliced into thin pieces.
2 cups-ish blackberries (270g), smashed so juices are released.
1 tbsp lemon juice
4 Tbsp water
Topping:
1/2 cup flour
3/4 cup Oats
1/4 cup white sugar
1/3 cup brown sugar
2 tsp cinnamon
1/4 tsp salt
6 Tbsp butter
1. Set oven to 400 degrees.
2. In a mixing bowl add peaches, smashed blackberries, water and lemon juice and toss gently until mixed together. Add to a baking dish.
3. In a separate bowl combine the topping ingredients and with a fork or pastry blender smash together until well mixed and you've created a crumbly consistency.
4. Sprinkle over fruit mixture.
5. Bake for an hour.
