I have seen so many variation of chia seed pudding but this one from Anthony at Medical Medium just spoke to me, I knew I had to make it! Like most recipes, I altered this one slightly to add the things that got me all excited to eat it.
Chia pudding is such an easy thing to make, you just add a few ingredients to a bowl, stir them up, let them sit in the fridge for a few hours and voila ... they thicken to give you a delicious and nutritious snack!
My favorite thing to top my chia puddings with are berries and/or granola.
Raspberry - Chia Pudding
- 1 cup fresh (or frozen, thawed) raspberries
- 3/4 cup milk of choice, I used fairlife
- 2 Tbsp. maple syrup
- 1 tsp. fresh lime juice
- 2 Tbsp. chia seeds
Place all ingerdients in a bowl, stir until well combined, cover anyplace in fridge for 3-4 hours or overnight. Remove and top with berries of choice and/or granola.
