Rice Pudding

Which recipes take you back to your childhood? This is totally one of them for me! Cold Minnesota Winters with warm rice pudding. I can remember the little, oval, yellow dish that my mom always cooked it in.


When I called her for the recipe though, she didn't have it anymore so I was left to come up with something that resembled what I could so vividly remember.


I'm not gonna lie, I'm pretty pleased with the final product! I think you will be too.



Rice Pudding

Oven Baked Rice Pudding - 2 cups cooked brown rice - 2 cups almond milk - 2 eggs - 5 Tbsp. Maple syrup - 1 tsp. Vanilla - 1 tsp. Cinnamon . Pour rice in the bottom of an 8x8 baking dish. Mix all other ingredients together and pour over the top. Bake at 350 for an hour and 10 minutes. . Serves 4
