Turkey Bacon Quiche

These little guys are so tasty! These are a perfect meal prep item since you can easily freeze them and then reheat them at a later time. All you have to do is take out as many as you'd like to eat and re-heat in the microwave for 30-45 seconds. The cheddar and parmesan cheese really compliment each other and the quinoa gives them the perfect consistency. Play around with there veggies you want to add you know, get creative! Bell peppers, potatoes, mushrooms and tomatoes would all go really well in these.


  • 2 Cups Cooked Quinoa

    • 2 Eggs

    • 2 Egg Whites

    • 1 Cup (75 g) Shredded Zucchini

    • 1/2 Cup Shredded Cheddar Cheese

    • 1/2 Cup Diced Turkey Bacon (pre-cooked)

    • 2 Tbsp. Parmesan Cheese

    • 2 Green Onions Chopped

    • Salt & Pepper to taste1. Preheat your oven to 350 degrees.

2. Spray a mini muffin tin with cooking spray

3. Combine all ingredients in a mixing bowl and stir until all combined.

4. Fill individual muffin tins to the very top.

5. Bake for 15-20 minutes or until edges are golden brown.

6. Freeze any leftovers.

7. Remove from freezer and microwave for 30-45 seconds until it's heated through.
